All About Asparagus

    • Multicolored Goodness: Asparagus typically comes in three colors: green, white, and purple. Purple asparagus is a unique variety, but to get white asparagus, farmers grow green plants underground to keep them pale, tender, and mild.
    • Spectacular Spears: We eat the shoots or “spears” of the asparagus plant, which poke up from the soil and have pointed ends. Asparagus spears are about the same diameter as a finger but two or three times as long.
    • Go for the Green: Asparagus lovers say the plant has “green” notes and use descriptions like “earthy,” “grassy,” and “leafy” to describe its taste. In short, it’s a veggie lover’s dream packed with the flavor of spring!
    • A Spring Sensation: In California, asparagus is in season from February through June, but its flavor peaks in the spring.

Meet an Asparagus Farmer: Victoria Island Farms

The Nichols family started growing delicious crops like asparagus, blueberries, and almonds near Holt, California, in 1964—and they’re still at it today! They use practices like no-till farming, harnessing solar energy, and setting aside land for wildlife to keep their farm sustainable.

How to Eat More Asparagus

Asparagus is full of healthy fiber, folate, and potassium. Add it to your snack rotation to boost your digestion and lower your risk of heart disease.

  • Tasty Ways to Enjoy Asparagus
    • Asparagus ‘Fries’: Dip asparagus spears in an egg and flour mixture, then roll them in seasoned bread crumbs. Bake the spears until golden brown and crispy for an addictive and healthy snack.
    • Sensational Skewers: Roast or steam asparagus spears, then season them, cut them into chunks, and chill them in the fridge. When they’re cool, thread them onto skewers with cherry tomatoes and cheese (mozzarella is a good choice) for a tasty grab-and-go treat.
    • Asparagus Toasts: Top tiny toasts with a dab of goat cheese or ricotta, a few slices of roasted and chilled asparagus, and a bit of red onion. Add a drizzle of olive oil and your favorite seasonings. It’s a healthy and flavorful snack! Perfect Spring Pasta: Asparagus and pasta make a perfect pair. Toss cooked asparagus chunks with your favorite noodles and white sauce. Pro Tip: Garlic, lemon, and nuts are great asparagus partners.
